Beyond the kitchen, Amanda is an organic farmer and passionate advocate for sustainable living. She grows what she cooks, nurturing the soil as thoughtfully as her recipes. Her work is guided by a belief in the healing power of whole, honest food, and the quiet magic that happens when we reconnect with nature, nourish our bodies, and come together at the table.

We stay in thoughtfully selected riads, villas, and mountain hideaways reserved exclusively for our group in spaces that feel intimate, personal, and entirely our own rather than shaped for passing tourism. Each guest has a private room and room to unwind, while the property itself becomes a shared home for the journey.

Our days unfold together around our own tables, in our own kitchens, and along the road, without the presence of outside guests. Every detail from private transfers and reservations to the daily rhythm and meals is carefully arranged, allowing us to move through the experience with ease, presence, and a true sense of belonging.

At the heart of the journey is Chef Amanda, founder of Ourika Organic Kitchen. She curates the meals we share, teaches regional techniques, and introduces us to the farmers, hosts, and makers who carry Morocco’s culinary heritage forward. Together, we cook over fire in the mountains, transform market ingredients into coastal meals, and explore how agriculture, craft, and culture shape flavour.

We begin in Marrakech, welcomed into a riad tucked within the medina. Here, we meet over tea and settle into the rhythm of the days ahead. Guided by local experts, we move through markets and quiet food stalls, tasting traditional dishes and dining in intimate restaurants where Moroccan tradition meets contemporary expression. The city reveals itself not through highlights, but through everyday rituals — bakers at dawn, spice merchants, artisans, and family kitchens.

From Marrakech, we rise into the Atlas Mountains, where Amazigh (Berber) communities live closely connected to the land. Here, daily life is shaped by season, agriculture, and tradition. We share meals in family homes, bake bread by hand, and cook outdoors surrounded by mountain air and birdsong. Food here is elemental — rooted in place, shaped by time, and shared generously.

As the landscape softens toward the Atlantic coast, we experience a deeper expression of rural life and farm to table cooking. At a working farm, ingredients are grown, gathered and prepared within the same landscape. A simple but powerful way of eating that reflects the rhythms of the land. In Essaouira, we wander the souks to source fish, vegetables and herbs for meals cooked together at a private villa, before long, relaxed evenings around the table.

As the journey draws to a close, we return to Marrakech with a deeper sense of place. We visit culinary social enterprises rooted in community development, spend time with artisans preserving traditional craft, and share one final hands-on experience: preparing Morocco’s celebratory Pigeon Pastilla. Our last evening is spent together at the riad — with music, shared stories, and a quiet sense of completion.

Throughout the journey, sustainability is not a concept but a lived reality. Ancient irrigation systems, traditional farming practices, generational knowledge, and community cooperation shape how food is grown, prepared, and shared. We meet elders, farmers, and cooks who demonstrate what it means to live in a relationship with land and lineage.

Frequently asked questions

How large are your groups?

Groups are limited to a maximum of 10-12 travellers, with very few exceptions.

Is there a solo traveller supplement?

We welcome solo travellers; however, private rooms are limited. A single room supplement may be available on request, subject to availability.

Should I purchase travel insurance?

Yes. While Deep Street is a fully insured travel provider, all guests are strongly advised to purchase comprehensive travel insurance covering cancellation, medical care, and travel disruption.

Can you accommodate dietary requirements?

We can accommodate vegetarian dietary requirements with advance notice. Unfortunately, we are not able to accommodate vegan diets on this journey due to the nature of regional cuisine and the environments in which we cook and dine. Dietary requirements should be shared at the time of booking.

Is this journey suitable for guests with mobility limitations?

Due to historic riads, uneven terrain, stairs, rural locations, and walking-based activities, this journey is not suitable for guests with significant mobility limitations.

What is the pace of the journey?

The journey is immersive rather than fast paced and includes walking, standing during cooking sessions, and time outdoors. A reasonable level of mobility is required.

When should I book flights?

Flights should not be booked until the journey has been confirmed. Guests will be notified once minimum numbers are reached.

Airline prices to Marrakech typically do not fluctuate significantly, so there’s no need to worry about missing out on better fares by waiting for confirmation.

What happens if I need to cancel?

Cancellation terms apply. Please refer to the Terms & Conditions below.

Terms & Conditions

Payment Structure & Guest Cancellation

A 40% non-refundable deposit is required at the time of booking to secure your place. This allows Deep Street to begin committing funds on your behalf.

Payment schedule:

• 40% deposit at booking (non-refundable)
• 30% second payment due 60 days after booking (non-refundable)
• 30% final balance due no later than 60 days prior to departure (non-refundable)

Because journeys are small group and carefully curated, all payments are non refundable.

Late & Last Minute Bookings

Bookings made within 60 days of departure must be paid in full at the time of booking. All bookings must be fully paid prior to the start of the journey.

If Deep Street Cancels the Journey

If Deep Street cancels the journey, guests will receive a 100% refund of all payments made.

A journey may be cancelled if:

• Fewer than five (5) guests are confirmed
• Circumstances beyond our control make the journey unsafe or unviable

Guests will be notified no later than 60 days prior to departure.
